About this experience

The course consists of approximately 8 dishes chosen by the chef.
Drinks are paired with the course, offering both alcoholic and non-alcoholic options.
Guests sit around a large table in the center of the restaurant, enjoying the chef’s skillful use of fire while savoring the essence of Oku-Yamanashi cuisine with all five senses. Private rooms are also available.

The dishes are inspired by the five natural elements: Wood, Fire, Earth, Metal, Water.
Fire and Wood are represented by the firewood used in cooking, Earth and Metal (minerals) represent the natural ingredients, and Water is symbolized by Mt. Fuji and the underground water of Lake Sai.
Just as these five elements exist in balance in nature, the cuisine at SAI aims to create new value through the synergy of ingredients, tableware, and space.

The culinary concept is "Oku-Yamanashi Cuisine"

"Oku-Yamanashi" derives from the deep, secluded location of Saiko, where Restaurant SAI 燊 is situated—a hidden gem among the Fuji Five Lakes. This concept celebrates the unique ingredients available only in this rare and extraordinary location, elevating them into a culinary art form. It is designed for diners seeking an ever-evolving gastronomic experience.

The foundation of the cuisine is wood-fired cooking, harnessing the power of various flame intensities to bring out the profound flavors of ingredients from the northern base of Mt. Fuji. These include game meats, mushrooms, mountain vegetables, highland produce, and freshwater fish.

Breaking away from conventional norms, this new gastronomy is guided by the philosophy of "honoring all living things by consuming them fully." It is a bold and innovative approach to dining that showcases the deep connection between nature and cuisine.
