Meet Youssouf at your hotel before you drive together to the Maarif market. This is a local market with stalls selling fresh fruits and vegetables, spices, olives, fish, meat, and everything else you need to prepare a Moroccan meal at home.
Roll up your sleeves and join Youssouf in his home kitchen to learn to prepare a few traditional Moroccan dishes with a twist. In your Casablanca cooking class, you will learn to make 2 dishes from scratch - an appetizer and a main dish.
A few dishes that you might try at Youssouf and Giselle's home are Moroccan lentils or zaalouk (smoked eggplant salad) or taktouka (Moroccan salad made with tomatoes, smoked peppers and garlic), Moroccan meatballs or baby chicken with saffron and preserved lemon sauce and olives or vegetarian tajine with seasonal vegetables and seasonal fruit salad with a touch of orange blossom.
