Visit the Spring Bay Distillery in Cambridge, not far out of Hobart. This is where it all happens, and the owners, Susanne and Cam are delighted to tell you their story before we embark on spirit tastings and distillery experience. Take a sneak peek and sample from one or two never released casks, or from the distiller’s favourite cask.
Spring Bay have a newly built Solera where you can bottle your very own 200ml bottle of cask strength Whisky.
You will sample their signature Gins and Vodkas along with several Whiskies and learn all about the art of distillation from their experienced distillers. We will have opportunities to sample the Wort, the liquid extracted from the Mash during the brewing process of Whisky.

Hobart Whisky is not open to the public. This is a true behind the scenes experience where you will meet the distillers in person. John, Ben or Trevor will talk you through the repurposed old Egg Factory and how they make the “Water of Life” like no other. Using a Whisky Thief, be the first to draw samples from barrels that are upcoming releases, never before sampled by the public. Here you will see hundreds of barrels racked to the ceiling and you will have the opportunity to marry your own whisky from 5 single malt casks. Learn the fine art of distillation, get your hands dirty and sample Gins, Vodka, Whisky, Rum and Liqueurs. In the main distillation room, you can sample the new make direct from the still and even stir a mash.
Lunch will be served here in the Distillery Loft - Locally catered individual options for each tour.

One of the newest distilleries on the scene and owner, Kristy Lark is of local distiller heritage. Here you will meet and chat with Kristy and her distiller team. You will be greeted with a beautiful Lavender Gin or other fitting beverages to reflect the days weather. You will sample incredible Whiskies, Gins, and Liqueurs. Our favourite sample is exclusive to you, the "Infinity Barrel". Killara's original Whisky is in the barrel and every cask produced has a portion added to that barrel, never going below 1/3. This is a historical journey of Killara's Whisky from its establishment to today.
