Right next door to Dum Pukht in the ITC Maurya hotel is another of Asia‘s best 50 restaurants: the legendary Bukhara. In contrast to the extravagant Dum Pukht, Bukhara serves its internationally-renowned kebabs in a dining room of clay tiles and bare wood, and dishes appear without cutlery but with bibs. You will be picked up from your hotel/ fixed point within city center and drive to ITC Maullya at 6 pm, after finishing, back to your hotel/fixed point .

The restaurant’s stone-clad walls furniture evoke the rustic origins of the cuisine- A key feature on the itinerary of practically every visitor to New Delhi. Bukhara recreates the charm of the traditional clay oven or tandoor with its delicious menu of succulent tandoor-cooked kebabs, vegetables and breads.

Today, Bukhara has perfected the art of cuisine, which is evident in its star dishes - the Bukhara Sikandri Raan, Bukhara Murgh Malai kababs, the iconic Dal Bukhara which is a combination of whole black lentils (urad dal), tomatoes, ginger and garlic, cooked and simmered over slow coal fires of the tandoor overnight for 18 hours at a stretch.
