When we first arrived in San Miguel de Allende, the only thing I missed was good cheese. It took some time and effort, but I finally discovered several superb local artisan cheesemakers hiding in plain sight.
Known as the Empress of Cheese, I've been studying the art and science of cheese for over 20 years in Canada, the US, France and in Italy and have spent the last few years exploring the culture of Mexican cheese, specifically, artisan made European style cheeses. Now I share my knowledge and the divine cheeses I've found with others.
Come learn about the rich history of European influences in Mexican artisan cheese and where to buy, how to serve and pair these cheeses with drinks and condiments and how set up a French inspired cheeseboard. Everything is sourced locally from the artisan cheeses to the herbs, flowers, honey and other ingredients used in the class.
