The winery was founded by Haridimos Hatzidakis and Konstantina Chryssou in 1997, with a commitment to producing wines that reflect the unique terroir of Santorini. They cultivate indigenous grape varieties such as Assyrtiko, Aidani, Athiri, and Mavrotragano, with a focus on organic and biodynamic viticulture practices.

Anhydrous winery is located in Fira, it's one of the notable wineries on the island of Santorini. Apostolos Mountrichas the owner is one of the new winemakers on Santorini. Anhydrous means “without water” that reflects the land of the island.
The wine tasting area is amphitheatric because it used to be an open air cinema!
