The winery was founded by Haridimos Hatzidakis and Konstantina Chryssou in 1997, with a commitment to producing wines that reflect the unique terroir of Santorini. They cultivate indigenous grape varieties such as Assyrtiko, Aidani, Athiri, and Mavrotragano, with a focus on organic and biodynamic viticulture practices.

This winery is located on the east side of the island, on the beach, between Kamari and Monolithos hamlets. Its industrial stone building was once a tomato factory, built at the beginning of the 1900´s and was used up until the 1970´s for making aromatic tomato purée from local cherry tomatoes. Today, it has been transformed into a modern winery with high-tech equipment and cutting-edge facilities that guarantee contemporary winemaking and ideal conditions for high-quality production.

Anhydrous winery is located in Fira, it's one of the notable wineries on the island of Santorini. Apostolos Mountrichas the owner is one of the new winemakers on Santorini. Anhydrous means “without water” that reflects the land of the island.

Estate Argyros has been established in 1903, but the Argyros family has been involved in wine production for decades before that. It is the largest private owner of vineyards in Santorini and the current landholdings exceed 120 ha, a vast, four-generations-long investment.
Gavalas family winery, one of the oldest wineries in Santorini, lies in the traditional village of Megalochori.
