This legendary pasta—hand-rolled with a mattarello and folded one by one by the master sfogline—is served in the most traditional way, in a rich capon broth.

The tortellino embodies centuries of tradition: a delicate square of fresh egg pasta filled with pork loin, prosciutto, mortadella, Parmigiano Reggiano, nutmeg, and pepper, carefully twisted into its iconic shape.
