【Experience Description】
The owner-chef will personally teach the process of making dashi, the foundation of "umami" (savoriness) essential to Japanese cuisine. You will taste several types of dashi made from different ingredients to appreciate the differences in "umami." During the meal, you will be served an authentic Washoku (Japanese cuisine) course prepared by the chef using homemade dashi.
・Duration: 1 hour for the experience, 2 hours for dining.
・Interpreter: Chinese or English (available only during the experience).
・Meal: You can choose between the regular course and the special course.
Staff can assist in capturing the experience using your mobile device or camera.
During the meal, you will be served cha-soba (tea buckwheat noodles) made with matcha and paired with a dashi-based dipping sauce.
