They procure fresh fish daily based on the number of reservations, ensuring that every dish features seasonal seafood from the Sea of Okhotsk. To deepen his understanding of fish, Owner Ishiguro sometimes boards fishing boats himself and has even leased farmland to cultivate vegetables for his restaurant. His commitment to sourcing ingredients is thorough and meticulous.
Born in Rausu Town at the base of the Shiretoko Peninsula, Owner Ishiguro was raised amidst the region's unique food culture.
